This vibrant marinade comes together in minutes to create the most tender pork sauce. It's sweet, a bit spicy, garlicky, and full of flavour! Plus, you can cook the leftover marinade to drizzle on top!

¼ Cup Black Cherry Balsamic
2 Tbsp. Chipotle Olive Oil
1 Tbsp. Soy sauce
2 Cloves garlic, minced
1 Tsp. Grated ginger
Medium pork tenderloin
Mix all marinade ingredients together. Place tenderloin in a baking dish and pour marinade over. Ensure everything is covered in the marinade and allow to marinate for minimum 1 hour.
After 1 hour, let the meat warm up for 15-20 minutes and roast at 400F for 20 minutes until cooked through. If the marinade starts to burn on the bottom of the tray, add 1/4 cup of water to the pan to ensure it doesn't burn.
Allow to rest for 5 minutes before slicing to serve. If there is any reserved marinade, cook it and drizzle over top.
