Ingredients

  • 2 Tbsp. Tuscan Herb Olive Oil
  • 1 Tbsp. Sicilian Lemon Balsamic
  • ⅓ Cup bocconcini cheese
  • 2 Cups mixed greens
  • ⅓ Cup tomato, diced
  • ¼ Cup red onion, slivered
  • ¼ Cup kalamata olives, halved
  • ¼ Cup pepperoncinis, sliced
  • ⅓ Cup salami, sliced
  • Salt and pepper, to taste

Directions

  1. Add bocconcini to a small bowl. Add Tuscan Herb Olive Oil, Sicilian Lemon Balsamic, salt and pepper. Stir to coat and set aside to marinate.
  2. Divide remaining ingredients among two salad bowls. Contents can be divided or tossed gently together.
  3. Divide bocconcini among the two bowls and top with remaining marinading liquid.
