A decadent olive oil cookie for chocolate lovers. Olive oil can take the place of butter in almost any cookie recipe! - Rachel W.
1 ½ cups granulated sugar
3 large eggs, beaten
3 tablespoons milk
2 teaspoons pure vanilla essence
½ cup Dutch cocoa
2 ⅔ cups all purpose flour
2 teaspoons baking powder
¾ teaspoons salt
¾ cups of granulated sugar
36- 42 chocolate chunks (white, dark or both)
1. Preheat oven to 375 F. Lightly coat a large cookie sheet with olive oil, cooking spray or baking paper.
2. In a mixer add olive oil, sugar, eggs and milk. Mix until well blended. Add vanilla and cocoa. Blend until the batter is smooth. Add flour, baking powder and salt. Mix until well blended.
3. Place granulated sugar on a plate. Roll batter into small balls and roll in granulated sugar until well coated. Place 3 per row on a cookie sheet, the cookies will spread.
4. Bake in oven 7 to 10 minutes. Remove from oven and press chunks of chocolate into the centre of each cookie. Cool on a wire rack and enjoy.
