Ingredients

½ Cup runny peanut butter, chunky or smooth

1 Tsp. Dark Toasted Japanese Sesame Oil

1 Tbsp. Lime Juice

1 ½ Tbsp. Soy Sauce
Directions
Mix all ingredients together in a bowl until thoroughly combined. Add a bit of water if the sauce is too thick.
Serve with rice paper rolls or use as a satay sauce.

This sauce is wonderful when thinned to make the dressing for a chilled noodle salad as well. Simply add an extra tablespoon of lime juice, some sweet chili sauce, and enough water to make a dressing. Pour over your favourite noodles with snap peas, carrot, bell pepper, edamame, and some shrimp, chicken, or tofu!
