10-12 lb. Turkey

1 Onion, chopped

1 Apple, chopped

2 Garlic cloves

4 Tbsp. Herbes de Provence Olive Oil, divided

Salt and Pepper, to taste

4 Tbsp. Cranberry Pear Balsamic

½ Cup orange juice

2 Tbsp. Brown Sugar

Directions
Preheat oven to 325°F. Pat dry the turkey dry, then sprinkle 1 Tsp. of salt around the interior. Place chopped onion, apple, and garlic cloves inside the cavity.
Using 2 Tbsp. of the olive oil, push some under the turkey skin. In the shallow dish, combine remaining 2 tbsp oil with 1 tsp each salt and pepper, brush this evenly over the turkey.
Tuck wings under turkey; tie drumsticks together. Place on a rack in a shallow roasting pan, breast side up and roast for 1 hour.
In a saucepan, combine all glaze ingredients and bring to a simmer over medium heat. Reduced by about half and baste along with pan drippings.
Cover turkey with foil; roast 2 to 2-1/2 hours longer or until a thermometer inserted in thickest part of thigh reads 170°-175°. Baste occasionally with pan drippings.
