Ingredients

10 Cups bread, diced into 2cm cubes

½ Cup Wild Rosemary Olive Oil

1 Cup diced celery
-
1 Cup chopped onion

2 ½ Tsp. Poultry seasoning

1 Tsp. Salt

½ Tsp. Pepper

¾ Cup chicken or vegetable broth
Directions
Over low-medium heat, sauté onions and celery in the Wild Rosemary Olive Oil until translucent. Add seasonings and remove from heat. Sautéing the celery and onions in the Wild Rosemary Olive Oil not only adds flavor but also helps to soften the vegetables. Aim for a translucent appearance, and be mindful not to brown them too much.
In a large mixing bowl, combine bread cubes and onion/celery mixture. Pour the broth over the mixture to moisten. Choose a hearty, crusty bread for the stuffing. Baguettes or rustic country loaves work well. Diced into 2cm cubes, the bread will absorb the flavors and maintain a good texture.
Transfer to a lidded roasting pan and bake at 350F for 2-3 hours, checking frequently to ensure even baking.
