Shrimp Tacos with Rosé Balsamic Grilled Peach Salsa
Every bite of these flavourful tacos is perfectly balanced with spicy Chipotle Olive Oil shrimp, crunchy slaw, and sweet peach salsa with our new Rosé Balsamic. This recipe is great with any stone fruit and you can easily swap in white fish for the shrimp.

Ingredients

20 Shrimp, peeled and deveined

2 Tbsp. Chipotle Olive Oil
-
1 Bell pepper
-
2 Scallions
-
2 Peaches, halved

4 Small tortillas
-
2 Tbsp. Pickled jalapeño peppers

1 Tbsp. Taco seasoning
-
½ Small red cabbage
-
1 Tbsp. Ultra Premium Rosé Balsamic, divided

1/4 cup Mayonnaise
Directions
Thinly slice the red cabbage. Roughly chop the jalapeño pepper and add it to a bowl with the red cabbage. Stir in the mayonnaise and ½ Tbsp. of the Ultra Premium Rosé Balsamic. Season with salt and pepper. Set aside.
Place the halved peaches, bell pepper, and scallions in a bowl. Drizzle with 1 Tbsp. Chipotle Olive Oil and season with salt and pepper. Grill the mix on a BBQ preheated to 450F until charred and slightly softened. Set aside.
Dice the grilled peaches, peppers and scallions. Place in a bowl with the remaining Rosé Balsamic, salt and pepper to taste; stir to combine.
Drizzle the shrimp with 1 Tbsp. Chipotle olive oil, salt, pepper, and taco seasoning. Toss to coat. Grill 2 to 3 minutes per side, or until opaque and cooked through.
Assemble tacos with grilled shrimp, slaw, and fruit salsa. Enjoy!
