Ingredients

2 Tortillas

½ Avocado, diced

½ Cup spinach leaves

½ Bell pepper, sliced

¼ Cup carrot, shredded

¼ Cucumber, sliced

¼ Cup sun-dried tomatoes

1 Can cannellini beans, drained and rinsed

2 Tbsp. Sage Olive Oil

4 Tsp. Sherry Reserva Wine Vinegar

¼ Cup sun-dried tomatoes

1 Clove garlic

Salt and pepper, to taste
Bean Dip
Directions
To a food processor, add all dip ingredients except beans and blend for a few seconds. Add beans and blend until thick and thoroughly combined.
Spread a thick layer of the bean dip on both tortillas. Add avocado, sliced veggies, and spinach.
Roll the tortilla like a burrito and enjoy!
