Cayenne Roasted Vegetable Caesar Mix
Turn your ceasar game up a notch with this homemade roasted vegetable mix. Fresh veggies are seasoned and tossed in Red Cayenne Olive Oil before being roasted to perfection. Blend together with the rest of your favourite caesar ingredients, and all you're missing is the vodka!

Ingredients

6-8 Tomatoes

1 Garlic head

1 Onion, quartered

2 Jalapeños, halved and seeded

¼ Cup Red Cayenne Chili Olive Oil

½ Tsp. Smoked Paprika

1 Tsp. Lemon Twist Sea Salt

1 Tsp. Celery seeds

½ Tsp. Black pepper

¼ Cup lemon juice
-
4 Cups tomato juice
-
1 Tbsp. Worcestershire sauce

1 Tbsp. Grated horseradish

2 Tbsp. Olive juice
Directions
Preheat the over to 450°F.
Arrange the vegetables in a single layer on a lined baking sheet. Drizzle with Red Cayenne Olive Oil, smoked paprika, celery seeds, black pepper and Lemon Twist Sea Salt. Bake for 20 minutes or until the vegetables are softened and slightly charred.
Remove from the oven. Into the jar of a blender squeeze the cloves from the roasted garlic, add the roasted vegetables, lemon juice, tomato juice, Worcestershire sauce, horseradish, and olive juice. Blend until smooth. Refrigerate until you’re ready to use.

To serve, a glassed rimmed with Lemon Twist Sea Salt is ideal!
For a more savoury blend, generously coat the vegetables in Wild Dill Olive Oil or Tuscan Herb Olive Oil. Also, try substituting the Worscestershire sauce for Neapolitan Herb Balsamic for an added Italian twist.
