Spicy Calabrian Pesto and Neapolitan Herb Flatbread

Ingredients

1 Ball ready made pizza dough

½ Cup pizza sauce
-
⅓ Cup goat cheese
-
½ Red onion, sliced
-
¼ Cup Spicy Calabrian Pesto Olive Oil, divided

2 Tbsp. Neapolitan Herb Balsamic

Chile flakes, if desired
Directions
Heat half the olive oil in a pan on low-medium heat and add the sliced red onions. Cook until they are caramelized, about 20 minutes.
While the onions are cooking, stretch out pizza dough and place on a pizza pan dusted with cornmeal to prevent sticking.
Spread pizza sauce on the dough, keeping about 1 cm away from the edge.
When the onions are done, layer onions on to the pizza and crumble goat cheese on top.
Bake in a preheated oven at 450F for 10-15 minutes, or until cheese is browning and the crust is fully baked on the bottom.
Let cool for 2-3 minutes, and drizzle with remaining olive oil and balsamic. Top with chile flakes, if desired, and cut.
Recipe Note
Some sliced cooked chicken or diced prawns round out this pizza with some delicious protein. For a sweeter take on the recipe, try swapping in our Mission Fig Balsamic!
I make these as mini pizzas using flat pita breads instead of pizza dough. Gives them a thin crispy crust. Spread some olive oil around the top edge of your pitas and it will stop the edges from burning while the pizzas cook.
