Decadent, creamy, comforting- this risotto ticks all the right boxes! The blend of White Truffle Olive Oil with salty Parmesan cheese is always delicious, especially when paired with a hearty risotto. Whatever mushrooms are available are perfect for this stunning recipe!
Place a large pot over low-medium heat and add 2 Tbsp. of Butter Olive Oil. Once heated, add the mushrooms and salt, to taste.
After the mushrooms have lost their moisture, add the thyme leaves and stir to incorporate. Remove the mushrooms from the pot and set aside.
Add remaining 4 Tbsp. Butter Olive Oil to the pan. Add onions and fry until translucent.
Add the arborio rice to the pot and stir to coat the grains. Deglaze with white wine. Add warmed stock to the pot, one cup at a time, stirring continuously. Repeat until all the stock is gone.
Grate fresh Parmesan cheese into the risotto. Add the Champagne Wine Vinegar and mushrooms to the risotto.
Stir the White Truffle Olive Oil into the mixture and add salt and pepper to taste. Garnish with additional Parmesan, if desired. Enjoy!
