If you love mushrooms, you will love this easy appetizer! Creamy herbed ricotta with a touch of sweetness is the perfect addition to crispy crostini and a savoury blend of onions and mushrooms. The addition of Wild Mushroom & Sage Olive Oil bumps up the rich flavour of these tasty bites.

Ingredients

Prepared crostini

8oz mushrooms of choice, sliced

½ mild white onion, diced

¼ cup Wild Mushroom & Sage Olive Oil

2 cloves garlic, minced

¾ cup ricotta
-
2 tbsp. honey
-
2 tsp. Silk Road Italian Seasoning
-
¼ tsp Roasted Garlic Sea Salt
Directions
Whip ricotta, honey, and Italian Seasoning with an electric blender or by hand until fluffy and well-mixed. Set aside.
Sauté onions and mushrooms on medium-low heat in Wild Mushroom & Sage Olive Oil until the onions begin to caramelize and mushrooms have lost their moisture. Add garlic and cook for an additional 2-3 minutes.
Spread a layer of the cheese mixture on to each crostini.
Take the mushroom mixture off the heat and stir the Roasted Garlic Salt into the mixture. Scoop a portion of the mushroom mixture on to each crostini.
Recipe Note
Try mixing up this recipe with goat cheese, brie, or mascarpone instead of ricotta. For an easier assembly, layer the cheese into a dish with the mushroom mixture on top and dip with crackers or crostini!
