Ingredients

2 Cups kale, torn

½ Apple, diced

¼ Cup dried cranberries

2 Tbsp. Slivered almonds

¼ Cup feta cheese, crumbled

2 Tbsp. Diced red onion

4 Tbsp. Wild Rosemary Olive Oil, divided

2 Tbsp. Cascadian Raspberry White Balsamic

1 Tsp. Grainy mustard

1 Garlic clove, minced

Salt and pepper, to taste
Dressing
Directions
Add the kale to a large bowl and drizzle with 1 Tbsp. of Wild Rosemary Olive Oil. Massage until the kale begins to darken and shrink. Set aside.
Combine all the dressing ingredients in a small jar and shake until combined. Toast the almonds in a pan until fragrant.
Divide the kale into two salad bowls. Top with apple, onions, and cranberries. Drizzle dressing over top and finish with feta cheese and cooled toasted almonds.

Okay you have convinced me that massaging the kale actually does something haha. Very nice recipe, the raspberry vinegar is one of our favourites. We used goat cheese instead of feta and it worked nicely
