This blend is mixed from a whole range of hard-to-find ingredients: lime peel, galangal, lime leaves, green serrano chiles, cilantro and basil, as well as lime juice powder for a really authentic flavour. The ideal way to use it is to mix it into a paste and marinate your chicken. For a basic paste, combine 2 tbsp of Thai Green Curry Powder, 2 tbsp of fish sauce, and 1 tbsp of lime juice. Then fry the whole lot in a pan with some olive oil before adding some chopped zucchini and a can of coconut milk. Simmer and serve on rice with crushed pistachios. Perfect.
